Ingredients

100g grilled chicken breast (contains 20g protein)Greens and veggies
2 cups mixed salad greens (e.g. spinach, arugula and kale)1/2 cup cherry tomatoes, halved
1/4 cucumber, sliced
1/4 red bell pepper, julienned

Instructions
1. Grill the Chicken: Season the chicken breast with salt, pepper and o pinch of paprika. Grill for 4-5 minutes on each side until cooked through. Slice into strips
2. Prepare the Dressing : In a small bowl, whisk together olive oil, lemon juice, Dijon mustard and pinch of salt and pepper
3. Assemble the Salad: In a large bowl, layer the mixed greens, cherry tomatoes, cucumber, bell pepper and avocado. Add the grilled chicken on top.
4. Dress and Garnish : Drizzle the dressing over the salad and toss lightly. Sprinkle fresh herbs for an extra burst of flavor
